Low-Carb Blueberry Pancake Breakfast Crepes

A Lighter Version Of a Breakfast Staple!


Eggs 2, beaten
Cream cheese 3 ounces, softened
Ground cinnamon 1 teaspoon
Sugar-free syrup 1 tablespoon
Butter 1 teaspoon
Fresh blueberries As desired, to top
Sugar-Free Syrup 1 tablespoon

5 minutes to prepare, 20 minutes to cook, ready in 25 minutes

These delicious and cream-cheese based crepes save on both carbs and calories with the addition of sugar-free syrup and light servings of butter. The addition of fresh blueberries to top adds flavor, but you can put your own spin on the dish by adding on strawberries and fresh cream (or low-fat cool whip if desired). Equal parts satisfying and extremely easy to whip up in under 30 minutes!

Step 1: Using a standard serving bowl, mash beaten eggs with cream cheese 1 teaspoon at a time until the mix even and free of any lumps

Step 2: Beat the syrup and cinnamon into the mixture evenly

Step 3: Using medium heat settings and a standard skillet, melt butter and reduce to medium when the butter has discontinued bubbling

Step 4: Mix in a few tablespoons of the mixture (into heated butter) and coat tthe bottom of your (nonstick) skillet

Step 5: Cook for about 4-5 minutes on the first side, then flip and cook for about 1-2 more minutes

Step 6: When crepes have small brown spots, they are fully cooked

Step 7: Top with fresh blueberries and any other fruit or cream as desired

This is a breakfast or brunch staple that’s great for the whole family, yourself, or a couple, and saves on calories, carbs, and sugar, while still being absolutely delicious! As you continue making them, you can try different spins of your own, like fresh banana, or even top with a hint of peanut or almond butter. A personal favorite is light whipped cream, blueberries, and a hint of fresh raspberry sauce to top.
