This simple recipe yields fresh lemon bars that are equally parts zesty, sweet, and buttery. Recipe yields over 30 servings, which can be enjoyed warm after cooking and saved for days later to enjoy chilled. At under 150 calories per serving, this is a treat that can be enjoyed sans guilt. Yum!
Step 1: Preheat your oven to 350 degrees F
Step 2: Use a clean bowl to mix and blend together 2 cups of all-purpose flour with butter (softened or melted) and 1/2 cup of white sugar
Step 3: Put mix in pan after blending thoroughly, making sure to coat the bottom and all sides evenly
Step 4: Bake the mix until a golden texture develops, for approximately 15 minutes, at 350 degrees F
Step 5: Mix together lemon juice, eggs and remaining flour and white sugar in a bowl, separately from original mix
Step 6: Add mix to freshly baked crust and bake for 15-20 minutes
Step 7: Cut the baked tray into rectangular bar-sized squares, sized to preference
You may wish to add additional lemon or lime slices to this treat, or add powdered sugar to the top! Can be enjoyed warm or cooled.
