Mixed vegetable casserole

Creamy and cheesy with plenty of healthy vegetables

Ingredients

Mixed vegetables 2 cans (15 ounces per can), drained
Onion 1 small
Condensed cream of chicken soup 1 can (10.75 ounces)
Mayonnaise 1 cup
Cheddar cheese 1 cup, shredded
Buttery round crackers 36, crushed

15 minutes to prepare, 30 minutes to cook, ready in 45 minutes

Casseroles are one of the most convenient dinner foods for several reasons: they’re cheap to make; they’re incredibly easy to make; they last for days; they can be frozen.

Here’s a really simple one for you.

Step 1: Start by preheating your oven to 350 degrees.

Step 2: Get a medium sized bowl, and put in the mixed vegetables, onion, soup, mayonnaise, and cheese. Give them a really good stir until they’re well combined.

Step 3: Lightly grease a 9×13 inch baking dish.

Step 4: Pour your vegetable mixture into the baking dish, spreading it evenly around the bottom.

Step 5: Top the vegetable mix with the cracker crumbs.

Step 6: Put it in the oven to bake until it’s browned and starting to bubble – that should take about a half hour.

That’s all there is too it. It’s a pretty convenient dish to prepare when you’re just in the door from work. You can get it in the oven then get yourself sorted, so it’ll be cooked by the time you’re ready to sit in front of the TV.
