Organic Vegetarian Quesadillas

A Fresh, Natural Spin On A Classic!


Red onion 1/2 cup, chopped
Mushrooms 1/2 cup, chopped
Yellow squash 1/2 cup, chopped
Red bell pepper 1/2 cup, chopped
Zucchini 1/2 cup, chopped
Whole wheat tortillas 6, 8-9 inches
Cooking spray 1
Olive Oil 1 tablespoon
Cheddar cheese 1 1/4 cups, shredded

15 minutes to prepare, 15 minutes to cook, ready in 30 minutes

A recipe for quesadillas is typically delicious, but usually comes served with meats, guac and plenty of sour cream. This dish puts a very healthy spin on a delicious favorite by using fresh, organic vegetables and fresh cheese. You may supplement with low or non-fat cheese if desired, and may wish to add salsa to top. At only 200 calories per serving, this makes a hassle and guilt-free dinner with all of the taste of a traditional preparation.

Step 1: Use your oven’s medium heat settings to cook cook red pepper, zucchini, yellow squash, onion, and mushrooms in olive oil

Step 2: When tender, remove vegetable mix

Step 3: Use sprayed pan and add in one 8-9 inch whole wheat tortilla

Step 4: Add 1/4 cup of cheese on top of tortilla

Step 5: Add 3/4 cooked vegetable/olive oil mix on top of the cheese

Step 6: Add an additional 1/8 cup of cheese on top of vegetable/oil mix

Step 7: Add an additional tortilla to cover cheese and vegetable mix

Step 8: Cook tortilla for approximately 2 minutes on each side, till desired cook, and cut tortilla (like a pizza) into triangular pieces

This healthy option makes a low-calorie dinner that’s easy to prepare and full of healthy, fresh vegetables!
