|Penne pasta||1 12oz package|
|Bacon||6 slices, chopped|
|Olive oil||2 tablespoons, divided|
|Parmesan Cheese||As desired|
|Fresh Spinach||1 bunch, torn into small pieces|
|Garlic||2 tablespoons, minced|
|Salt and Pepper||To Taste|

This light but delicious penne pasta dish combines crunchy bacon with fresh spinach and seasonings. Perfect for anytime of year, guests will love this and it’s incredibly easy to make. It makes a great lunch option or a light dinner, and you can top it with added veggies or season it to your liking if desired.
Step 1: Boil water (salted) and add in pasta for 8-10 minutes, to be served el dente
Step 2: Heat oil (1 tablespoon) using medium settings in skillet, and mix bacon in skillet, cooking until crisp and brown
Step 3: Add in minced garlic for about 1 minute, then stir in tomatoes, cooking until heated thoroughly
Step 4: Using a colander, place in fresh chopped spinach and penne over it
Step 5: Place into a serving bowl and mix in tomato mix, bacon, and the remaining olive oil
Step 6: Add on salt and pepper as desired and sprinkle with parmesan cheese to top
You can whip up this fresh and seasoned dish so quickly and it’s incredibly savory! Even with the addition of bacon the meal still seems light and flavorful, and doesn’t call for any heavy cream, yet is still very flavorful.
