Quesadillas are based around the glorious ingredients of carbs and cheese. These are relatively quick to prepare, can be reheated if you want to bring them to work, and aren’t the most damaging in terms of calories.
Step 1: Start by preheating your oven to 365 degrees.
Step 2: Take a bowl, and pour in both the Cheddar and Parmesan cheeses, the black bean, and cilantro, and give them a good stir until they’re well mixed.
Step 3: Take one tortilla, and place it on a baking sheet. Put your salsa in the middle of the tortilla, and spread it around evenly.
Step 4: Put your cheese and bean mix on top of that, again, spreading it evenly.
Step 5: Put the other tortilla on top of the cheese mix, and brush that with the melted butter.
Step 6: Put the quesadilla into your preheated oven, for about 10 minutes or so. By that time, the cheese should be melting nicely, and the top of the quesadilla should be starting to brown.
Step 7: Cut up the quesadilla using a pizza cutter, and garnish it with the guacamole and bell pepper.
There you go. This recipe is just for one person, but it’s easy to make it for more, just increase the amount of ingredients accordingly. It’s a nice one for a lazy weekend lunch with a movie!
