Cream of broccolli soup

The best way to get these healthy greens!

Ingredients

Butter 5 tablespoons
Onion 1 chopped
Celery 1 stalk
Chicken broth 3 cups
Broccoli florets 8 cups
All-purpose flour 3 tablespoons
Milk 2 cups
Ground black pepper To taste

10 minutes to prepare, 25 minutes to cook, ready in 35 minutes

It’s important to eat your greens, but it’s also important to get them in a flavorsome way.

Step 1: In a medium stock pot, melt 2 tablespoons of the butter.

Step 2: Add the onion and celery, and sauté them until they’re tender.

Step 3: Get the broccoli and chicken broth into your pot, and leave it all to simmer for 10 minutes.

Step 4: Next, get your soup mixture into your blender, but only about halfway. Give your blender a few short bursts, then leave it on to make a proper, smooth soup.

Step 5: Keep doing this, until all the soup has been blended, pouring it into a clean pot as you go.

Step 6: With a clean, smaller saucepan, melt the remaining 3 tablespoons of butter, over a medium heat.

Step 7: Add the flour and the milk, stirring it all in well together.

Step 8: Add the butter/flour/milk mixture you’ve just made into the main pot of soup, and mix that it well.

Step 9: Add as much ground black pepper as you like, and then you’re ready to serve.

This is a great way to use up broccoli that you bought with great intentions of healthy eating!
