Pesto Pasta Caprese Salad

Traditional Caprese Salad With Pesto Over Pasta!


Pesto 3 tablespoons
Rotini pasta 1 1/2 cups
Fresh basil 2 leaves
Fresh mozzarella balls 1/2 cup, small sized
Grape tomatoes 1/2 cup, halved
Extra Virgin Olive Oil 1 tablespoon
Ground black pepper 1/8 teaspoon
Salt 1/4 teaspoon
Granulated garlic 1/4 teaspoon

10 minutes to prepare, 10 minutes to cook, ready in 20 minutes

This Italian-style favorite includes traditional fresh basil and fresh mozzarella cheese, with the addition of rotini pasta and pesto. Perfect to serve hot or save for later as a cold lunch dish, this meal is zesty and delicious!

Step 1: Boil large pot of water (with added salt)

Step 2: Add rotini pasta, cook for approximately 8-10 minutes to desired firmness, recipe calls for el dente style pasta

Step 3: Add rotini to a mix of pesto, olive oil, salt, granulated garlic, and black pepper in a small or medium bowl

Step 4: Add in fresh mozzarella cheese balls, tomatoes, and basil

Step 5: Season with pepper and/or salt if desired

Step 8: Ready to serve or refrigerate until serve-time

This dish is really simple and puts a lovely spin on an Italian-classic.
