Quinoa and black bean burger

A trendy, vegetarian-friendly burger


Black beans 1 can (15 ounce)
Quinoa 1/4 cup
Water 1/2 cup
Bread crumbs 1/2 cup
Yellow bell pepper 1/4 cup, minced
Onion 2 tablespoons, minced
Garlic 1 large clove, minced
Ground cumin 1 1/2 teaspoons
Salt 1/2 teaspoon
Hot pepper sauce 1 teaspoon
Egg 1
Olive oil 3 tablespoons

15 minutes to prepare, 20 minutes to cook, ready in 35 minutes

Quinoa is still one of those trendy, healthy foods, and is widely mocked for that. However you feel about trendy foods, these veggie burgers are just as hearty as any meat one.

Step 1: Put the quinoa and water in a saucepan and bring it to a boil.

Step 2: Then, lower the heat to medium-low. Cover the saucepan, and leave it to simmer for 15 or 20 minutes. By this stage, the water should be pretty much absorbed, and the quinoa should be tender.

Step 3: Turning to the black beans now. In a bowl, mash them up with a fork. There’s no need to be too fussy about it being super-smooth – it’s OK if there are still some whole ones in there.

Step 4: Using a large bowl, combine the quinoa, bread crumbs, bell pepper, onion, garlic, cumin, salt, hot pepper sauce, egg, and the black beans. Do this using your hands.

Step 5: Start making patties out of your mixture from Step 4 – you should get five out of it.

Step 6: Get the olive oil into a large skillet, and start heating it on your stove.

Step 7: Cook your newly formed patties for a coupe of minutes on either side. That should be enough to get them heated right the way through.

It’s not a difficult recipe. Obviously, you can put them with your choice of roll, and put any salad or cheese on them that you’d like.
