Quinoa Salad with Black Beans

A Vegan-Friendly Healthy Lunch Option!


Quinoa 1 cup
Water 2 cups
Lime 2, juiced
Extra virgin olive oil 1/4 cup
Salt 1 teaspoon
Cherry tomatoes 1 1/2 cups, halved
Ground Black Pepper and salt To taste
Ground cumin 2 teaspoons
Red pepper flakes 1/2 teaspoon
Black beans 1 15oz can, drained
Green onions 5, chopped
Fresh cilantro 1/4 cup

20 minutes to prepare, 10 minutes to cook, ready in 30 minutes

This hassle-free lunch option is vegan friendly, healthy, nutritious and very flavorful. A great way to enjoy vegetables and quinoa.

Step 1: Boil water and quinoa in saucepan

Step 2: Reduce to low heat, cover and let simmer for 15 minutes

Step 3: Simmer until water has been absorbed, then cool

Step 4: Mix together olive oil, lime juice, cumin, teaspoon of salt and red pepper flakes

Step 5: Mix green onions, black beans, tomatoes and quinoa together in separate bowl

Step 6: Pour dressing over quinoa mixture

Step 7: Add in cilantro and black pepper

Step 8: Sprinkle with additional salt and pepper if desired
