Tomato chutney

A delicious homemade condiment

Ingredients

Red onion 1.1 pounds, finely sliced
Tomatoes 2.2 pounds, chopped
Garlic gloves 4, sliced
Red chilli 1, chopped (optional)
Ginger 2 inches, peeled and chopped
Brown sugar 8.8 ounces
Red wine vinegar 2/3 cup
Cardamom seeds 5
Paprika 1/2 teaspoon

30 minutes to prepare, 1 hour to cook, ready in 1 hour and 30 minutes

Chutney is an excellent accompaniment to eggs and avocado, but best of all with some good cheese and crackers.

Something this delicious should not be this easy to create!

Step 1: Get yourself the biggest pan you have, an set it on your stove.

Step 2: Pour all of the ingredients you’ve prepared into the pan.

Step 3: Stir the mixture continually while you bring it to a gentle simmer.

Step 4: Leave it at that simmer for one hour.

Step 5: Bring it all to a gentle boil – this should turn the mixture dark, shiny and like jelly.

Step 6: Pour the mixture into sterilized jars, let it cool, and then cover them up.

That’s all there is to it. It’ll be good for six weeks.
