Paleo Poached Avocado Eggs

Ingredients

Eggs 2, small
Avocado 1, halved and pitted
Bacon 2 slices, crumbled
Chives 2 teaspoons
Salt and Pepper To taste
Dried parsley 1 pinch, or to taste
Sea Salt 1 pinch, or to taste
Ground black pepper 1 pinch, or to taste

10 minutes to prepare, 15 minutes to cook, ready in 25 minutes

This delicious spin on the Paleo diet combines fresh, creamy poached eggs with soft avocado and a hint of crunchy bacon to top (if you desire). Healthy, satisfying, and hearty, this is sure to be a hit at your next brunch get together or gathering. The combination of cream and fresh fruit makes for a really savory pairing and is extremely flavorful. Season as desired before or after baking.

Step 1: Preheat your oven to 425 degrees F

Step 2: Crack 2 small eggs into a bowl, and arrange the avocado halves (pitted) on a baking dish

Step 3: Spoon 1 egg yolk into the avocado hole, then spoon in egg white until the pit is full (repeat same process with other avocado half)

Step 4: Add in chives, parsley, sea salt, and pepper to season as desired

Step 5: Place in your baking dish (using preheated oven), and bake for about 15 minutes until eggs cook, sprinkle bacon crumbs to top

This is a dish that’s not only very easy to whip up, but combines soft flavors with delicious fresh poached eggs, and makes for the perfect simple brunch recipe. For a brunch, you can even serve this with your favorite lox on the side or extra veggies. It takes under 30 minutes and is healthy and very filling!
