Lavender Shortbread Cookies

Buttery Shortbread Cookies With a Hint of Fresh Lavender!

Ingredients

White sugar 2/3 cup
Butter 1 1/2 cups, softened
Confectioners sugar 1/4 cup, sifted
Lavender 2 tablespoons, finely chopped
Fresh mint leaves 1 tablespoon, chopped
Grated lemon zest 1 teaspoon
Cornstarch 1/2 cup
All-purpose flour 2 1/2 cups
Salt 1/4 teaspoon

These lavender shortbread cookies are both attractive and delicious. The addition of lavender blends a unique flavor into an otherwise buttery, traditional cookie. Serving size is 24, making these a treat you can save and go back to all week!

Step 1: Cream together the butter, white sugar and confectioners’ sugar until fluffy texture is achieved using a medium bowl

Step 2: Add in lemon zest, mint and lavender to mix

Step 3: Combine cornstarch, flour, and salt, mixing batter thoroughly until an even blend is achieved

Step 4: Divide the dough into two rounded and even balls, secure in plastic wrap and flatten to about 1inch thick. Refrigerate for an hour or so, until firm.

Step 5: Preheat oven to 325 F and roll dough to a 1/4 inch thickness on a lightly floured cutting board

Step 6: Cut into cookie shapes using stamps or cookie-cutter and place on sheets

Step 7: Bake for about 20 minutes using preheated oven, until cookies begin to brown at their edges.

Step 8: Cool the cookies completely prior to serving
