Cheesy Mexican Stuffed Peppers

The Perfect Hosting Dish!


Colby-Jack Cheese 6 (1 inch) cubes
Ground Beef 1 Pound
Cooked Rice 1/2 cup
Chili Powder 2 teaspoons
Taco Seasoning Mix 1 (1 oz) package
Water 3/4 cup
Salt 1/4 teaspoon
Garlic Salt 1/4 teaspoon
Tomato Sauce 2 (8 oz) cans divided
Red Bell Peppers 3, Large

15 minutes to prepare, 1 hour to cook, ready 1 hour and 15 minutes

These delicious and cheesy stuffed bell peppers are a Mexican classic and will be a hit with friends and family. Excellent flavor, savory, and melt in your mouth delicious. These are also perfect for hosting parties and dinner guests.

Step 1: Preheat oven to 350 degrees F, and meanwhile grease a 9×13-inch baking dish

Step 2: Using medium heat settings, place ground beef into skillet for about 8 minutes, crumbling it as it heats

Step 3: Mix in taco seasoning, water, chili powder, cooked rice, salt, garlic salt, black pepper, and 1 can of tomato sauce

Step 4: Bring these ingredients to a boil, reducing your heat settings to low, and simmering for about 20 minutes or so

Step 5: Cut bell peppers in half (remove stems, membranes, cores, and seeds), then steam in a saucepan, and fill with water to right below the bottom surface of the steamer

Step 6: Bring water to a boil using high heat settings and cover your steamer, place peppers inside and steam for a maximum of 5 minutes

Step 7: Place steamed peppers into your baking dish and stuff with meat filling

Step 8: Place one cube of cheese to top on the meat filling (on steamed peppers), and spoon on the remaining can of tomato sauce

Step 9: Cover dish with foil and bake in (preheated) oven for about 30 minutes, until peppers are tender and the meat filling feels hot to the touch

This is a dish that’s not only incredibly delicious, it’s perfect for guests, the entire family, and a true classic Mexican favorite. You can try adding on cheddar cheese if you prefer, or topping with additional spices if you’d like, but as is- this dish is true perfection!
