Gluten-Free Grilled Shrimp Scampi

Garlic 3 tablespoons, minced
Ground black pepper To taste
Lemon juice 1/4 cup
Olive oil 1/4 cup
Red pepper flakes To taste, crushed
Fresh parsley 3 tablespoons, chopped

30 minutes to prepare, 5 minutes to cook, ready in 35 minutes

This dish is light, fresh and marinates shrimp in lemon, parsley and garlic. An excellent seafood dinner option that will impress the family and any guests! This dish is gluten-free and makes a great option for anyone with sensitivities. Extremely low in carbs, packed with protein and under 200 calories per serving make this equal parts healthy and delicious.

Step 1: BMix and stir together lemon juice, parsley, garlic, olive oil and black pepper

Step 2: Add shrimp and coat with mixture

Step 3: Let sit in fridge for 30 minutes to marinate

Step 4: Using high settings, preheat grill

Step 5: Add and thread shrimp to skewers

Step 6: Oil grate and grill for approximately 4 minutes (2 per side) until opaque

Step 7: Add pepper or more lemon to season if desired
