Creamy Pesto With Fresh Chicken


Penne pasta 1 16oz package
Pesto 1/4 cup
Heavy cream 1 1/4 cups
Olive oil 2 tablespoons
Salt and pepper To taste
Garlic 2 cloves, minced
Butter 2 tablespoons
Parmesan cheese 3 tablespoons, grated
Chicken breasts 4, skinless, halves

20 minutes to prepare, 10 minutes to cook, ready in 30 minutes

Savory and delicious! Creamy pesto sauce is served atop al dente style penne pasta and fresh chicken. Those who don’t eat meat may opt to top with fresh vegetables. This meal can be enjoyed and served warm for dinner, but saves well, making it a great lunch option for the week (hot or cold). Chicken broth can be used to substitute or cut down on cream if desired.

Step 1: Boil water and cook penne pasta for approximately 8 minutes, to be served al dente

Step 2: Heat oil and butter using medium settings, add garlic and chicken to saute

Step 3: Continue to saute until chicken is almost cooked

Step 4: Add in salt, pepper, pesto, cream and cheese

Step 5: Cook until chicken is no longer pink and stir into pasta
