Creamy Curry Vegetarian Soup

With Fresh Broccoli, Cheese & Cauliflower

Ingredients

Cauliflower 1 head, finely chopped
Onion 1, finely chopped
Milk 1/2 cup
Chicken Broth 1 Quart
Broccoli 1/2 head, finely chopped
Curry Powder 1 teaspoon
Salt and Pepper To taste
All Purpose Flour 1/4 cup
Cheddar Cheese 2 cups, shredded
Chicken bouillon granules 1 tablespoon

15 minutes to prepare, 45 minutes to cook, ready in 1 hour

These delicious and cheesy soup is rich, filling, savory, and has a hint of spice without being overwhelming. Even with the fresh veggies, this is so tasty the kids will love it! Add in additional curry as desired if you prefer a spicier option, but served as is this makes the perfect lunch or starter for dinner and hits the palette perfectly! Vegetarian-friendly, but you can add meat if desired.

Step 1: Using a standard stockpot, mix in your chicken broth, onion, cauliflower, and broccoli

Step 2: Bring mix to a boil and reduce heat to low, then simmer until veggies are tender

Step 3: Season using chicken bouillon, curry powder, salt, and pepper

Step 4: Use a bowl to mix 1/2 a cup of milk and flour, whisking gently until the mixture is free of any lumps

Step 5: Add in mix to soup, stirring as needed until the soup begins to thicken

Step 6: Add in cheddar cheese until fully melted

Step 7: Top with salt and pepper as desired, or any other desired seasonings/garnish

This is a dish that’s not only savory and cheesy, you can throw in healthy veggies and the whole family will still love it! Equal parts creamy and spicy, when you need something that tastes amazing and fills you up on a chilly day, this is a perfect spin on a classic curry soup.
